Important Things that you must know before you are Lasagna
Don’t overcook the noodles.
Lasagna needs structure, there’s a lot of stuff in between! So they can’t be too sticky. Make sure to cook them until they are very chewy; they are usually ready two minutes before the time on the box.
When you make a beef and ricotta mixture, you usually hang the Lasagna in a colander and stick it together (worst nightmare). To prevent this, drain the noodles from the Pasta Pot, rub them with olive oil, then lay them on a baking sheet to cool.
Sometimes we have a little bit of Lasagna, and we skip that step when making meat sauce. We always regret that the sauce is too rich! The LASAGNA layer must drain the fat from the frying Pan because the lasagna layer already has a lot of cheese fat in it.
Season your RICOTTA mixture
My Italian grandmother always added a secret ingredient to LASAGNA: Cinnamon. The ricotta mixture is often overlooked, so it’s a bit bland. Make sure you season it well with salt and pepper and fill it with herbs!
LASAGNA is one of those solid dishes. Even if it looks like a Tacky, blistered mess in the oven, it’s the perfect place to heat it and leave it for about 15 minutes.
